Job Title: Executive Performance Head Chef

Contract Type: Fixed Term

Hours of Work: 37.5 hours per week

Department: First Team Support

Location: Leeds United Training Ground, Thorp Arch and travel to 1st Team away and home fixtures at away and home hotels

Responsible to: Head of Football Operations

Responsible for: All home and away meal preparation

DBS: Yes

Role Summary

Working closely with the First Team Head of Nutrition developing performance menus, food purchase specifications, managing catering staff and developing and monitoring food and headcount budget for the department. The role will be working in collaboration with the First Team Head of Nutrition and Performance Staff to ensure a focus on performance catering, maintaining the highest possible food quality and service standards. This full-time role will require a flexible approach to working hours as there will be the requirement to work evenings and weekends to support the needs of the training ground, first team and academy. The successful applicant will be required to travel to 1st Team away fixtures and work with chefs at away and home hotels to ensure food is cooked and presented to highest standards.

Role Responsibilities

  • Overseeing the preparation, cooking, and service arrangements of all food and beverages at Thorpe Arch, and to take responsibility for the smooth and efficient running of the kitchen.

  • Checking quality, taste, texture and safety of food being presented, and exercising portion control for all items served.

  • Develop innovative and performance focused menus and recipes in collaboration with the First Team Head of Nutrition.

  • Providing catering on the Team coach to staff and players during away travel.

  • Travel to away fixtures ensuring the same quality, portions and nutrition requirements are implemented in hotels.

  • Assist the home hotel chefs for home games to ensure meals are high quality and meet our performance standards.

  • Oversee post-match meals at Elland Road.

  • Support the needs of academy players in collaboration with the First Team Head of Nutrition and Academy Manager.

  • Sourcing high-quality produce and approving the purchase of products and other necessary food supplies working within the set budget.

  • Ensuring that high standards of cleanliness and safety are maintained throughout all areas of the kitchen at all times.

  • To ensure equipment and food temperature readings are taken and recorded on a daily basis.

  • Preparing necessary data for applicable parts of the budget, projects annual food, labour and other costs and monitoring actual financial results.

  • Attending facility, nutrition and management team meetings as necessary.

    Manage the rota of kitchen staff at the training ground to meet the needs of first team, academy and training ground staff.

  • Minimise food wastage and implement efficient ways of working

  • Keeping up to date with trends and best practice within the industry ensuring we are at the forefront of performance nutrition, service and standards.

Other Responsibilities

To take responsibilities for personal performance and the development of personal skills to ensure the required skills, knowledge and competence to fulfil the role.

Qualifications & Training

Essential

  • Level 3 or equivalent in food preparation & service

Desirable

  • HACCP & Food Safety Level

Knowledge, Skills & Experience

Essential

  • Excellent technical cooking skills

  • Understanding of flavor and ingredients

  • Good knowledge of nutrition and diet to aid optimum performance

  • Managing inventory

  • Creating menus

  • Demonstrates honesty, integrity, reliability, and the ability to ensure confidentiality at all times
